1. The inspiration behind your cook book was…
How I eat every day. Sometimes I have smoothie bowls for dinner, sometimes I have pizza. This book is for everyone like me who has limited time but still wants nourishing food on their table in under 30 minutes. All my favourite foods made healthy and simply.
2. What is next for you and your business?
I’m enrolled in a Bachelor of Science in Nutrition + Dietetics at Endeavour College. I’m only studying part time so that I can still manage the business side of things. This year will see the launch of some exciting new additions to my Fit Mixes range too - watch this space!
3. What is your favourite recipe from the cook book and why?
Tahini Miso Cookies - they’re fast, simple, and savoury. I always find savoury snacks a hard one to master, but these are so delicious and great to carry on the go too.
4. How is your approach different to other healthy living cook books?
My book is actually more of a ‘lifestyle’ book rather than a cookbook. It has heaps of health tips, meditation techniques, HIIT workouts, yoga flows, how to read food labels, how to pick a protein powders, tips on how to handle over-eating and much much more!
5. Who or what is your personal inspiration
I take inspiration from all around me and try to surround myself with inspiring women. There’s definitely no one person I can pin it on, but
I’m very grateful to my incredibly talented manager Roxy Jaxenco who heads up Ministry of Talent and Sweaty Betty PR - superwoman doesn't even come close.
6. If you were a superhero, what would your super power be and why
The ability to teleport myself around the world in the blink of an eye! I’d pop to Paris, Japan, LA, New York and then home to see my family in the UK. #winning!
